Do You Like Happy Endings?

Well, this book sure is full of happy endings! And we had a happy ending too as we met to discuss our 3rd book, Savannah Breeze by Mary Kay Andrews with good food!

We had our 3rd book club meeting last night.  We all met at Kristi's house (thanks Kristi!).  We had a delicious homemade meal.  

The menu:

For appetizers we had crab-cakes made by yours truly.  At the end of the book there was a recipe for Crab-cakes, which by the way, is excellent.  They are very easy to make too so that is a plus.  I also made a Lemon Remoulade sauce to go along with the crab-cakes and the shrimp.

but you get the idea.

Brittney was in charge of the shrimp.  She did an excellent job marinating and grilling the shrimp.  She is such a champ with the grill even though the starter was broken.  I wanted to capture the explosion as the grill started but this is as close as I got.  :0)


Kristi baked the potatoes.  They were so yummy!

Elizabeth was in charged of all the stuff for the baked potatoes.  Did you know you can add red bell pepper, grape tomatoes and Italian dressing to your baked potato in addition to the other stuff like butter, sour cream and cheese?  I've never had it so loaded like that before, but I'm glad I tried it.  It was really good.  Definitely not P90X approved!

Lucy cooked the best broccoli ever, which complimented the meal very nicely.  She also brought Limeade.

And to end the meal, we had Key Lime Pie!  Thanks Heather, it was heavenly!

Okay, so with all that being said, we are ready to embark on our new adventure as we read our 4th book selected by Heather....

Noodle-and-Spinach Casserole

I made this dish last Friday and even Dave liked it, which is a good sign.  In addition, it was very easy to make so I'll be cooking this again!  ~Enjoy!

Pineapple Upside-Down Cake V

I just finished making this Pineapple Upside-Down Cake V for a co-worker's birthday tomorrow. I've never used this recipe before so I hope it's good :0) !  ~I'm sure ya'll will hear about it, if it's a total disaster!

I have to go now.  I have to wake up in 5 hours!  I'll tell you more about our weekend later...

Crunch, chewy, creamy

One day, quite some time ago, Dave mentioned to me how he wanted to try these Peanut Butter Sandwich Cookies. He loves peanut butter. I mean, he really really does. So, I said "okay" and left it at that. He looked at me and said, "you are going to forget." - Isn't that sad? Oh, how well he knows me. Well then, I had to prove him wrong. I guess, I also wanted to make these peanut butter cookies for him after all he is doing for us! So, after Awanas last week, after putting the kids in bed, at about 9:00 p.m. I began making the cookies. I wanted to have them ready for him for when he got to San Antonio. They were so yummy! He was surprise, but after he took the first bite, he started to talk about how we could tweak them the next time we make them. Aw!!!
